What We Do
Every shape — pici, trofie, tajarin — is rolled, cut, and filled in-house each morning. We do not freeze. We do not outsource. The dough rests as long as it needs.
Our menu changes with the calendar, not the other way around. Spring asparagus in April. Wild boar in autumn. If it is not at its peak, it is not on the plate.
A focused cellar of small-production Italian wines — Sangiovese from Montalcino, Vermentino from Sardinia, Nebbiolo from the hills of Barolo. Each bottle chosen to meet the kitchen.
